Mini Raspberry Cheesecake in Wilton Mini Tart Molds


I received these mini silicone Wilton tart molds as a gift from my mom and I couldn’t wait to try them out. I wanted to see how well a cheesecake would look and bake in one.

So as a test, I baked a mini raspberry cheesecake and the results were fantastic and delicious.

Plus, it was coming out of the mold nicely as I tried peeling it away. But since it was for me, I let it stay in there. :)

These are great molds and I will be using them often.


As for the cheesecake recipe, I followed the same recipe from the raspberry loaf pan post but I used mini loaf pans instead and saved some batter for the tart mold.

I actually like the tart mold cheesecakes than the mini loaf pan ones. They made for a cuter presentation.
